Sausage, Veggies, and Rice "bowl"

OK. So you’re thinking, “white rice” really? And, I’m gonna say, heck ya! It’s the same glycemic index as brown rice and it’s easier to digest. As someone with tummy issues. I’ll take the one that helps me feel better every single time. For this meal, it also serves as a better base of all the flavor that is layered over it.


All in one rice, veggies, and protein on ONE plate makes a great weeknight, make it fast, sort of meal.
Rice bowls are an easy way to "hide" your veggies!

 

Ingredients - serves 1 1/4 cup rice

2 chicken apple sausages

1 cup mushrooms, sliced

1/2 cup fennel, sliced

2 "sprigs" green onion

1 tsp garlic

1 tsp Chinese 5 spice

1 tsp ginger, ground

1 tsp extra virgin olive oil

Salt, pepper, sriracha, and sushi ginger to taste

Sesame seeds if desired


Directions

  1. Boil rice per package instructions; bonus if you do it in broth.

  2. While rice is cooking, warm oil in sautée pan to med-high heat. Cook veggies until soft.

  3. Add sliced sausage, warm until slightly browned.

  4. Layer in a bowl or on a plate as desired and enjoy!

NOTE: try a drizzle of sesame oil or sprinkle of sesame seeds, too.
