Roasted Brussels Sprouts + Beets

"Brussels Sprouts are my favorite!" said no one ever. They may not be my favorite either, but they are definitely on a plate in my house at least once a month! Enjoy this easy side dish next to a spicy lean protein and a healthy carb to round out your meal.


 

Ingredients 1 lb fresh brussels sprouts, halved

1/2 lb beets, in 1 in pieces

1 cup feta crumbles

Handful kalamata olives

1 tbs olive oil

1 tbs bacon fat

Salt and pepper to taste

Red pepper flakes if desired


Directions

  1. Pre-heat oven to 425 degrees.

  2. Line a baking sheet with parchment paper.

  3. Mix all in a medium bowl.

  4. Arrange in one thin layer on the baking sheet and let roast for 25 min. Turn over, sprinkle with feta evenly, bake until the veggies are soft -- about 10 more minutes.

  5. Serve warm, and enjoy!
