Dinner Idea: Steak, Salad, Cornbread

Few things are more straightforward for dinner than a simple protein, bright salad, and a buttered piece of cornbread.


 

Ingredients Steak: Your preferred cut of steak

Salt, garlic, paprika to taste

1 tbs olive oil

Salad (per serving): Mixed greens .5 tbs pecans

1 tbs parmesean cheese

1 lemon, juiced

1 tsp each dill seasoning and pepper

.5 tbs olive oil


Cornbread 1 box mix of choice

1 can pumpkin purée

Butter, if desired

Note. if you're using a smaller box like Krusteez, try a 1/2 can of puree and add in more until you get a good consistency.


Directions

  1. Mix cornbread mix contents and full can of pumpkin in a bowl. Follow box directions for cooking.

  2. While bread is in the oven, warm olive oil in a cast iron pan on med. heat

  3. Sprinkle a little salt, garlic, and paprika, let warm and place steak over seasonings

  4. Heat on each side until your desired doneness is achieved.

  5. While steak cooks, toss greens with seasonings, lemon juice, and olive oil. Top with feta after plating.

  6. Slice and butter bread before plating.

  7. Enjoy!


NOTE: you could cook the steak in the oven while the cornbread is cooking.
